Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/2 cup butter, softened Make sure the butter is softened to room temperature.
  • 1/4 cup powdered sugar
For the lemon filling
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup lemon juice Fresh lemon juice is preferred.
  • 1 teaspoon lemon zest Add more for a stronger lemon flavor.
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
For the topping
  • 1 cup heavy cream Whipped cream for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
  2. In a mixing bowl, combine flour, powdered sugar, and softened butter to create the crust mixture. Press it into the bottom of the prepared baking pan.
Baking
  1. Bake the crust for 15 minutes, or until lightly golden.
  2. While the crust is baking, whisk together granulated sugar, eggs, lemon juice, lemon zest, salt, and baking powder in a separate bowl until well combined.
  3. Pour the lemon filling over the baked crust and return it to the oven for an additional 25 minutes, or until set.
Cooling and Serving
  1. Allow to cool completely, then refrigerate for at least an hour.
  2. Before serving, whip the heavy cream and spread it over the top.
  3. Cut into bars and serve chilled or at room temperature.

Notes

Serve chilled for enhanced refreshing flavor. Store in an airtight container in the refrigerator for up to 4 days or freeze for up to a month, wrapped securely to avoid freezer burn.
