Preparation
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan.
- In a mixing bowl, combine flour, powdered sugar, and softened butter to create the crust mixture. Press it into the bottom of the prepared baking pan.
Baking
- Bake the crust for 15 minutes, or until lightly golden.
- While the crust is baking, whisk together granulated sugar, eggs, lemon juice, lemon zest, salt, and baking powder in a separate bowl until well combined.
- Pour the lemon filling over the baked crust and return it to the oven for an additional 25 minutes, or until set.
Cooling and Serving
- Allow to cool completely, then refrigerate for at least an hour.
- Before serving, whip the heavy cream and spread it over the top.
- Cut into bars and serve chilled or at room temperature.
