Ingredients
  

For the brownie layer
  • 0.5 cup butter, melted
  • 1 cup granulated sugar
  • 3 units eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.3 cup cocoa powder
  • 0.5 tsp baking soda
  • 0.5 tsp sea salt plus extra for topping
For the cookie layer
  • 0.5 cup butter, softened
  • 0.75 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare an 8×8-inch baking pan by lining it with parchment paper.
  2. In a bowl, combine melted butter, granulated sugar, eggs, vanilla, cocoa powder, and 1 cup of flour. Whisk everything together until smooth to create the brownie batter.
  3. Spread the brownie batter evenly into the prepared baking pan.
  4. In a separate bowl, cream the softened butter and brown sugar together until smooth. Then add one egg and vanilla, mixing well.
  5. Stir in the remaining flour, baking soda, sea salt, and chocolate chips until a cookie dough forms.
  6. Drop small discs of the cookie dough evenly over the brownie batter.
Baking
  1. Bake in the oven for 30–35 minutes or until the center is set but still soft.
  2. As soon as you take them out of the oven, sprinkle lightly with flaky sea salt.
  3. Allow the brookies to cool completely in the pan for about 2 hours before slicing them into 16 squares.

Notes

To serve, enjoy warm with vanilla ice cream or at room temperature with milk or coffee. Store in an airtight container at room temperature for up to four days, or freeze for longer storage.
