Prepare the Cucumbers
- Wash and thoroughly dry the English cucumbers. Using a sharp knife, slice the cucumbers into approximately 1/4-inch thick rounds. For the best crispness and to prevent soggy bites, gently pat each cucumber slice very dry on both sides with a paper towel. Set aside.
Create the Cream Cheese Spread
- In a medium mixing bowl, combine the softened cream cheese, sour cream, finely chopped fresh dill, finely chopped fresh chives, fresh lemon juice, garlic powder, onion powder, salt, and freshly ground black pepper.
- Using a spoon, small spatula, or electric mixer on low speed, mix all ingredients until they are well combined and the mixture is smooth, creamy, and free of lumps. Taste and adjust seasoning if necessary.
Assemble the Bites
- There are two ways to apply the spread: you can either spoon a small dollop (about 1 teaspoon) of the cream cheese mixture onto the center of each prepared cucumber slice. Alternatively, for a more elegant presentation, transfer the cream cheese mixture into a piping bag fitted with a star tip and pipe a decorative swirl onto each cucumber round.
- Arrange the assembled cucumber cream cheese bites neatly on a serving platter.
Garnish and Chill
- Optionally, sprinkle a tiny pinch of smoked paprika or red pepper flakes on top of each bite for a touch of color and a subtle flavor kick. You can also add a small sprig of fresh dill.
- For optimal flavor melding and a firmer texture, cover the platter with plastic wrap and chill the cucumber cream cheese bites in the refrigerator for at least 15-30 minutes before serving. Enjoy!
Notes
These bites are best enjoyed fresh. To keep them from getting soggy, ensure your cucumber slices are very dry before adding the cream cheese. If making ahead, assemble no more than 1-2 hours before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours, though cucumbers may soften over time.
