Method
Make the Cake Batter
- Preheat your oven to 350°F (175°C). In a bowl, mix together the flour, baking powder, and salt.
- In another bowl, beat together the butter and granulated sugar until it’s light and fluffy.
- Add the egg whites and vanilla extract, mixing well.
- Gradually add the dry ingredients to this mixture, alternating with the milk. Mix until smooth.
Tint and Bake
- Divide the batter into separate bowls based on the number of colors you want.
- Add different gel food coloring to each bowl and stir until you reach your desired colors.
- Grease your cake pans and pour the colored batter into them.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for a few minutes before transferring them to a wire rack.
Make the Buttercream
- In a large bowl, beat the softened unsalted butter until creamy.
- Gradually add the powdered sugar and mix well.
- Pour in the heavy cream or milk, vanilla extract, and a pinch of salt; beat until the mixture is fluffy and smooth.
Assemble the Cake
- Once the cakes are completely cooled, take one layer and place it on your serving plate.
- Spread a layer of buttercream on top, then add the second layer of cake.
- Repeat this for any additional layers.
- Cover the entire cake with a thin layer of buttercream to seal in the crumbs, then refrigerate for about 30 minutes.
Decorate!
- After chilling, use the remaining buttercream to coat the cake fully.
- Decorate with gel food colors for the unicorn mane and any other decorations you like.
- You can use candy, edible glitter, or even fondant to enhance the magical look.
Notes
Store any leftover cake in an airtight container at room temperature for up to three days. For longer storage, keep it in the refrigerator for up to a week. You can freeze individual slices in a freeze-safe container for up to three months.
