Ingredients

  • 1 box strawberry cake mix with pudding
  • 2 large eggs Ensure at room temperature
  • 0.33 cup vegetable oil
  • 1 tsp vanilla extract
Glaze Ingredients
  • 0.75 cup powdered sugar For glaze
  • 2 tbsp strawberry preserves For glaze
  • Milk Add as needed for glaze consistency

Preparation
  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch glass baking dish.
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, vegetable oil, and vanilla extract. Stir until a thick dough forms.
  3. Press the dough evenly into the prepared pan and bake for 18–22 minutes until the center is set.
  4. Allow the brownies to cool completely.
Making the Glaze
  1. In a small bowl, whisk the powdered sugar, strawberry preserves, and a small amount of milk until a thick glaze forms.
  2. Spread the glaze evenly over the cooled brownies and allow it to set before slicing.
Serving
  1. Slice into 16 squares and serve to reveal the soft, pink fudgy centers.

Notes

Store any leftover brownies in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze in a sealed container for about a month. Ensure ingredients are at room temperature for better mixing. Do not over-bake the brownies; check them at the lower baking time for a fudgy texture. Mix in chocolate chips or nuts for added texture, or substitute with raspberry or cherry cake mix for a different flavor.
