  • 2 lbs Green Beans (fresh or frozen, ends trimmed) Fresh green beans give the best flavor and texture.
  • 1 sm Sweet Onion (sliced)
  • 1/2 lb Thick Cut Bacon (cut in 1.5" pieces) Can reduce or use turkey bacon for a healthier option.
  • 1 lb Potatoes (new or baby potatoes, or larger ones cut)
  • 2 cloves Garlic (minced)
  • 1 tsp Kosher Salt (or 3/4 tsp table salt)
  • 1/2 tsp Pepper
  • 3 cups Chicken broth (low sodium) Can substitute with vegetable broth for a vegetarian version.

Preparation
  1. Add all of the ingredients to the crock and stir gently.
Cooking
  1. Cook on High for 3-4 hours, or Low for 6-7 hours.
Serving
  1. Serve hot as a side dish to complement your main course.
  2. Pair it with grilled chicken, pork chops, or beef roast, and serve with buttered cornbread.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat in the microwave or on the stovetop. Customize by adding vegetables like carrots or bell peppers.
