Preparation
- Cut the pork into chunks and season generously with taco seasoning.
- In a large skillet, heat oil over medium heat. Add diced onions and cook until translucent, about 4-5 minutes. Stir in minced garlic and cook for another minute.
Cooking
- Add the seasoned pork to the skillet, cooking until browned on all sides for about 8-10 minutes.
- Lower the heat and add a splash of water or broth. Cover and let it simmer for 30-40 minutes until the pork is tender.
- Use two forks to shred the pork in the skillet and stir everything together.
Assembly
- Warm tortillas in a separate pan for about 30 seconds on each side.
- Spoon the shredded pork onto the warm tortillas and add desired toppings.
Notes
For extra flavor, slow cook the pork. Keep the shredded pork warm in a slow cooker if making a big batch. Consider using tortilla holders for easy assembly.
