Ingredients
  

For the Pork
  • 2 pounds Pork shoulder or pork belly Cut is perfect for slow cooking; may substitute with chicken or beef.
  • 1 medium Onion Red or yellow onions work well.
  • 2 cloves Garlic Fresh minced garlic brings depth; powdered garlic can be used as a substitute.
  • 1 cup Cilantro Fresh cilantro provides brightness; parsley can be used instead.
  • 2 tablespoons Taco seasoning Use store-bought or homemade mix.
For Assembly
  • 8 pieces Corn or flour tortillas Corn tortillas are traditional; flour tortillas are softer.
  • Toppings (such as diced tomatoes, shredded cheese, avocado) Use your favorite toppings.

Method
 

Preparation
  1. Cut the pork into chunks and season generously with taco seasoning.
  2. In a large skillet, heat oil over medium heat. Add diced onions and cook until translucent, about 4-5 minutes. Stir in minced garlic and cook for another minute.
Cooking
  1. Add the seasoned pork to the skillet, cooking until browned on all sides for about 8-10 minutes.
  2. Lower the heat and add a splash of water or broth. Cover and let it simmer for 30-40 minutes until the pork is tender.
  3. Use two forks to shred the pork in the skillet and stir everything together.
Assembly
  1. Warm tortillas in a separate pan for about 30 seconds on each side.
  2. Spoon the shredded pork onto the warm tortillas and add desired toppings.

Notes

For extra flavor, slow cook the pork. Keep the shredded pork warm in a slow cooker if making a big batch. Consider using tortilla holders for easy assembly.
