  • 1 can Pinto beans Black beans can be used as an alternative.
  • 2 cups Flour For making frybread.
  • 1 tsp Baking powder For frybread.
  • 1 tsp Salt For frybread.
  • 1 cup Water Gradually added to form dough.
  • 2 cups Shredded lettuce Can be swapped with arugula or spinach.
  • 1 cup Diced tomatoes Pico de gallo can be used for more flavor.
  • 1 cup Shredded cheese Use cheddar or Monterey Jack; dairy-free cheese works too.
  • 1 cup Salsa Choose mild or spicy based on preference.
  • 1/2 cup Sour cream Greek yogurt is a lighter substitute.
  • 1 medium Avocado Can substitute with guacamole.
  • 1 cup Vegetable oil For frying the frybread.

Method

Preparation of Frybread
  1. In a large bowl, mix flour, baking powder, and salt. Gradually add water until a soft dough forms. Knead for a few minutes, then divide into equal balls. Flatten each ball into a round shape.
Frying the Bread
  1. Heat vegetable oil in a deep skillet over medium heat. Fry each dough round for about 2-3 minutes on each side or until golden brown. Remove and let drain on paper towels.
Cooking the Beef
  1. In a separate pan, brown the ground beef over medium heat. Drain excess fat if necessary. Mix in the taco seasoning and a splash of water, cooking for another minute until flavorful.
Warming the Beans
  1. In a small pot, heat the pinto beans over low heat until warmed through. You can mash them slightly for easier spreading.
Assembling the Tacos
  1. On each piece of frybread, spread a layer of beans, followed by the seasoned beef. Top with lettuce, tomatoes, cheese, and drizzle salsa and sour cream on top.
Serving
  1. Enjoy these delicious Navajo tacos warm and fresh!

Notes

Don’t overcrowd the frying pan for even cooking. Aim for the oil temperature to be around 350°F for crispy frybread. Consider sautéing your veggies for a heartier taco. Experiment with spices for personalized flavor.
