Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, baking soda, and salt.
- In another bowl, cream the butter, sugar, and brown sugar until fluffy.
- Add the egg, vanilla, lemon zest, and lemon juice to the mixture.
- Gradually add the dry ingredients to the wet mix until just combined.
- Fold in the blueberries gently.
Baking
- For each cookie, take a spoonful of dough, create a small hole in the center, add a small piece of cream cheese and a dollop of blueberry jam, then cover it with more dough.
- Bake for 10-12 minutes or until lightly golden.
- Let cool before serving.
Notes
These cookies are best served warm and can be paired with tea or coffee. For an added touch, sprinkle powdered sugar on top before serving. Store leftovers in an airtight container for up to 3 days or refrigerate for a week.
