Ingredients
  

Salad Base
  • 4 cups Mixed greens Can substitute with spinach or kale.
  • 1 cup Cucumbers Try pickled cucumbers for a twist.
  • 1 cup Cherry tomatoes Regular tomatoes can be used in a pinch.
  • 1/2 small Red onion Soak in water to mellow the taste.
Meats and Cheese
  • 4 oz Salami Use turkey or ham for a lighter version.
  • 4 oz Pepperoni Any preferred deli meat can work.
  • 4 oz Provolone cheese Mozzarella or feta are great substitutes.
Dressings and Garnish
  • 1/2 cup Olives Can substitute with capers if you’re not an olive fan.
  • 1/4 cup Italian dressing Homemade is even better!
  • 1/4 cup Fresh herbs Basil or parsley for a burst of freshness.

Method
 

Preparation
  1. Wash and dry the mixed greens, then slice the cucumbers, cherry tomatoes, and red onion into bite-sized pieces.
  2. Cut the salami, pepperoni, and provolone cheese into strips or cubes.
Assembly and Dressing
  1. In a large bowl, toss together the mixed greens, cucumbers, tomatoes, red onion, salami, pepperoni, provolone cheese, and olives.
  2. Drizzle the Italian dressing over the salad, tossing well to ensure everything is coated.
  3. Top with fresh herbs and serve immediately, or chill for a bit to let the flavors meld.

Notes

This salad is best enjoyed fresh but can be stored in an airtight container in the fridge for up to 3 days. Keep the dressing separate until you're ready to eat.
