Preparation
- Preheat the oven to 425°F (220°C).
- In a mixing bowl, combine the carrot sticks, honey, olive oil, salt, and pepper.
- Spread the carrots on a baking sheet in a single layer.
Cooking
- Roast in the oven for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Once done, remove from the oven and toss with crumbled feta cheese and fresh dill.
Serving
- Serve warm as a side dish.
Notes
Make sure to cut the carrots into even sticks to ensure they cook evenly. Stir the carrots halfway through the roasting time for even caramelization. Adjust sweetness by adding more or less honey according to taste.
