Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 1 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
Fruits and Topping
  • 2 cups fresh peaches, diced Use ripe peaches for best flavor.
  • 1/4 cup brown sugar For topping.
  • 1 teaspoon ground cinnamon For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the milk, melted butter, and eggs.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Fold in the diced peaches.
  5. Fill each muffin cup about 2/3 full with batter.
  6. In a small bowl, mix the brown sugar and cinnamon for the topping, then sprinkle it over the muffins.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool for a few minutes before serving.

Notes

Serve warm for the best flavor. They pair well with coffee or tea. To store, keep in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Thaw at room temperature when ready to enjoy. Consider adding nuts or oats for extra texture.
