Ingredients
  

For the chicken
  • 1 pound chicken thighs Juicy and flavor-packed; chicken breasts are also an option for a leaner meal.
  • 2 tablespoons olive oil Look for extra virgin for the best flavor.
  • 2 cloves garlic Fresh cloves give a punch of flavor; substitute with garlic powder if needed.
  • 1 teaspoon dried oregano A must-have for authentic Greek taste; can substitute with Italian seasoning.
  • 1 teaspoon paprika Adds color and mild smokiness; smoked paprika can be used for extra depth.
  • to taste salt and pepper Adjust to your taste.
For the gyros
  • 4 pieces pita bread Soft and warm; whole wheat or gluten-free options can be used.
  • 2 cups fresh veggies (like tomatoes, cucumber, and red onion) Customize with your favorites.
  • 1 cup tzatziki sauce Creamy, garlicky goodness; can be bought or made homemade.

Method
 

Marination
  1. In a bowl, mix the olive oil, garlic, oregano, paprika, salt, and pepper. Add the chicken thighs, ensuring they're well coated. Let it marinate for at least 30 minutes, or overnight for more flavor.
Cooking
  1. Preheat a grill pan over medium-high heat. Once hot, add the chicken and grill for about 5-7 minutes on each side, or until cooked through and the juices run clear. Remove from heat and let it rest for a few minutes before slicing.
Preparation of toppings
  1. While the chicken is resting, slice your veggies and prepare the tzatziki sauce if making homemade.
Warming the pita
  1. Place the pita bread in a dry skillet over low heat for about 1 minute on each side until warm and pliable.
Assembly
  1. Lay the warm pita on a plate, layer with sliced chicken, veggies, and a generous drizzle of tzatziki sauce. Roll it up tightly and enjoy!

Notes

For even more flavorful chicken, marinate for 1-2 hours if you have the time. Don’t crowd the pan while grilling for even cooking. Serve everything on a platter for guests to build their own gyros.
