Prepare the Horseradish Aioli
- In a small bowl, mix the mayonnaise, horseradish, Dijon mustard, black pepper, and a pinch of salt. Stir until everything is combined well.
Assemble the Sandwiches
- Take two slices of sourdough bread. Spread the horseradish aioli on each slice. Layer the roast beef, cheddar cheese, and red onion on one slice. Top with the other slice of bread.
Grill the Sandwiches
- Heat a skillet over medium heat. Spread the softened butter (or mayonnaise) on the outer sides of the sandwich. Place the sandwich in the skillet and grill for about 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.
Serve
- Remove the sandwich from the skillet, slice it in half, and serve warm.
Notes
Use high-quality roast beef for the best flavor. If you prefer a spicy kick, add extra horseradish to the aioli. For added freshness, include leafy greens like spinach or arugula inside the sandwich.
