Garlic Herb Green Beans and Mushrooms

Ingredients
  

  • 1 lb Fresh Green Beans trimmed
  • 8 oz Cremini Mushrooms wiped clean and sliced
  • 2 tbsp Olive Oil
  • 3 cloves Garlic minced
  • 1 tsp Fresh Thyme chopped
  • 1/2 tsp Fresh Rosemary chopped
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground, or to taste
  • 2 tbsp Vegetable Broth optional, for deglazing

Method
 

Prepare Ingredients
  1. Wash and trim the ends off the fresh green beans. If desired, cut longer beans in half. Wipe cremini mushrooms clean with a damp cloth and slice them. Mince the garlic and chop the fresh thyme and rosemary.
Sauté Mushrooms
  1. Heat olive oil in a large skillet over medium-high heat. Once hot, add the sliced mushrooms in a single layer if possible. Cook for 5-7 minutes, stirring occasionally, until they are nicely browned and have released their liquid.
Add Green Beans and Aromatics
  1. Add the trimmed green beans to the skillet with the mushrooms. Sauté for another 3-5 minutes, stirring frequently, until the green beans are bright green and tender-crisp.
  2. Stir in the minced garlic, chopped fresh thyme, and chopped fresh rosemary. Cook for just 1 minute more, stirring constantly, until the garlic is fragrant. Be careful not to burn the garlic.
Season and Serve
  1. Season the vegetables generously with salt and freshly ground black pepper. If the pan seems dry, you can add 2 tablespoons of vegetable broth and stir, scraping up any browned bits from the bottom of the skillet (deglazing).
  2. Remove from heat and serve immediately as a delicious side dish.

Notes

For a little extra zing, a squeeze of fresh lemon juice at the end can brighten up the flavors. If you don't have fresh herbs, you can use 1/2 tsp dried thyme and 1/4 tsp dried rosemary, adding them along with the garlic.
