  • 1 cup Sliced cucumbers Seedless cucumbers are ideal.
Toppings
  • 1/4 cup Sunflower seeds Can be replaced with other nuts or seeds.
  • 1/2 cup Feta cheese Omit for a vegan version.
Dressing
  • 2 tablespoons Olive oil Use extra virgin for best flavor.
  • 2 tablespoons Lemon juice Freshly squeezed is recommended.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Freshly ground black pepper is best.

Preparation
  1. In a large bowl, combine the mixed greens, diced tomatoes, sliced cucumbers, sunflower seeds, and crumbled feta cheese.
