Ingredients
  

For the crust
  • 16 ounces store-bought sugar cookie dough Use your favorite cookie dough for the crust.
For the cheesecake filling
  • 24 ounces Philadelphia Original Cream Cheese 3 packages, room temperature
  • 8 ounces sour cream Room temperature
  • 1.25 cups granulated sugar
  • 4 large eggs Room temperature
  • 1 tablespoon vanilla extract
  • cup dye-free natural sprinkles For mixing in and decoration

Method
 

Prepare Crust
  1. Preheat your oven to 350°F (175°C). Press the sugar cookie dough into the bottom of a springform pan to form an even crust. Bake for 10 minutes and let it cool slightly.
Lower Heat & Prep Water Bath
  1. Reduce the oven temperature to 325°F (160°C). Wrap the outside of the springform pan with aluminum foil to prevent water from leaking in. Place it in a larger baking dish.
Mix Cheesecake Batter
  1. In a large mixing bowl, beat the cream cheese until smooth. Add in the sour cream, sugar, eggs, and vanilla extract. Mix until everything is well combined and creamy. Gently fold in the sprinkles.
Assemble & Bake
  1. Pour the cheesecake batter into the cooled crust. Fill the larger baking dish with boiling water halfway up the sides of the springform pan. Bake for about 1 hour, or until the center is set but still slightly wobbly.
Cool Gradually
  1. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour to help prevent cracking. After that, transfer it to the fridge and chill for at least 4 hours, or overnight.
Serve & Celebrate
  1. When ready to serve, carefully remove the cheesecake from the springform pan. Top with extra sprinkles for a beautiful finish.

Ensure all ingredients are at room temperature for a smooth batter. Don’t overmix to avoid air incorporation, which can lead to cracking. Utilize a water bath for even baking, and feel free to experiment with different sprinkles or flavor extracts.
