Main Ingredients
  • 4 pieces Boneless, skinless chicken breasts Can use frozen chicken breasts.
  • 1 can Cream of chicken soup Can use low-fat version for lighter option.
  • 4 cups Chicken broth Homemade broth offers better flavor.
Vegetables
  • 2 cups Carrots (diced)
  • 1 cup Celery (diced)
  • 1 cup Onion (diced)
Dumplings
  • 1 tube Biscuit dough (canned or homemade) Use gluten-free option for gluten sensitivity.
Seasonings
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 tsp Seasonings (e.g., thyme, garlic powder) Feel free to customize with your favorite herbs.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crock pot.
  2. Add cream of chicken soup, chicken broth, diced carrots, celery, and onion.
  3. Season with salt, pepper, and any additional seasonings.
Cooking
  1. Cover and cook on low for 6 hours.
  2. About 30 minutes before serving, drop spoonfuls of biscuit dough on top.
  3. Cover and let cook until the dumplings are fluffy and cooked through.
Serving
  1. Serve hot, straight from the crock pot, with a side salad or steamed vegetables.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in microwave or on the stovetop.
