  • 1 lb lobster meat Fresh or cooked lobster; substitute with shrimp if desired.
  • 8 oz pasta Fettuccine or linguine works well.
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version.
  • 2 cloves garlic Fresh garlic for best flavor.
  • 2 cups spinach Fresh baby spinach or kale can be used.
  • ½ cup sun-dried tomatoes Roasted red peppers can be used as a substitute.
  • ½ cup Parmesan cheese Grated; Pecorino Romano can be used as an alternative.
  • 2 tbsp olive oil Can use avocado oil.
  • to taste salt, pepper, crushed red pepper flakes For seasoning.

Method
 

Preparation
  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. In a large skillet, heat the olive oil over medium heat, then add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the heavy cream and let it simmer for 2-3 minutes to thicken slightly.
  4. Toss in the fresh spinach and sun-dried tomatoes, and cook until the spinach wilts, about 2 minutes.
  5. Fold in the lobster meat and half of the Parmesan cheese, mixing until well combined.
  6. Add the cooked pasta to the skillet, tossing to coat in the sauce. If the sauce is too thick, pour in a bit of the reserved pasta water to reach desired consistency.
  7. Season with salt, pepper, and crushed red pepper flakes to taste.
  8. Plate the creamy lobster pasta and sprinkle the remaining Parmesan on top. Serve and enjoy!

Notes

For added flavor, you can serve this pasta with garlic bread or a light green salad. Consider pairing it with a glass of chilled white wine, like Sauvignon Blanc.
