Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9x5 inch loaf pan.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture alternately with milk, starting and ending with the flour mixture. Mix until just combined.
- Pour the batter into the prepared loaf pan.
Baking
- Bake for about 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
Serve with fresh berries and whipped cream, or drizzle with chocolate for added flavor. Store wrapped tightly for up to 3 days at room temperature or freeze for up to 3 months.
