Cinnamon Sugar Butter Swim Biscuits

These unbelievably tender biscuits bake directly in a pool of melted butter, then are topped with a sweet cinnamon sugar crust, making every bite pure comfort. A delightful breakfast treat or dessert!

Ingredients
  

For the Butter Swim
  • 1/2 cup unsalted butter melted
For the Biscuits
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups whole milk
For the Cinnamon Sugar Topping
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Method
 

Prepare for Baking
  1. Preheat your oven to 400°F (200°C).
  2. Melt the 1/2 cup unsalted butter in a microwave-safe bowl or small saucepan. Pour the melted butter evenly into a 9x9 inch baking dish, ensuring the bottom is fully coated.
Make the Biscuit Dough
  1. In a large mixing bowl, whisk together the all-purpose flour, 1/4 cup granulated sugar, baking powder, and salt until well combined.
  2. Pour the whole milk into the dry ingredients. Mix with a spoon or spatula until just combined. The dough will be very wet and sticky, almost like a thick batter. Do not overmix.
Assemble and Top
  1. Carefully pour the wet biscuit dough over the melted butter in the prepared baking dish. Use a spatula to gently spread the dough evenly across the bottom of the dish.
  2. In a small bowl, whisk together the 1/4 cup granulated sugar and ground cinnamon for the topping.
  3. Evenly sprinkle the cinnamon sugar mixture over the top of the biscuit dough.
Bake the Biscuits
  1. Bake for 25-30 minutes, or until the biscuits are golden brown on top and cooked through. A toothpick inserted into the center should come out clean (avoiding the melted butter layer at the bottom).
  2. Remove from oven and let cool in the pan for 5-10 minutes. The melted butter will have soaked into the bottom of the biscuits, making them incredibly moist and flavorful.

Notes

These biscuits are best served warm, shortly after baking. Leftovers can be stored in an airtight container at room temperature for up to 2 days, but they will lose some of their initial crispness and tenderness. Reheating briefly in a microwave or oven can help revive them. For an extra treat, drizzle with a simple powdered sugar glaze (powdered sugar + a splash of milk/vanilla extract)!
