Ingredients
  

Brownie Layer
  • 0.5 cup butter, melted
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 0.3 cup cocoa powder
  • 0.5 tsp baking soda
  • 0.5 tsp sea salt plus extra for topping
Cookie Layer
  • 0.5 cup butter, softened
  • 0.75 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together melted butter, granulated sugar, eggs, vanilla, cocoa powder, and 1 cup of flour until smooth to create the brownie batter.
  3. Spread the brownie batter evenly into the prepared baking pan.
Cookie Dough Preparation
  1. In a separate bowl, cream the softened butter and brown sugar until smooth.
  2. Add one egg and the vanilla, and mix well.
  3. Stir in the remaining flour, baking soda, sea salt, and chocolate chips to form the cookie dough.
Baking
  1. Drop small discs of cookie dough evenly over the brownie batter.
  2. Bake in the preheated oven for 30–35 minutes until the center is set but still soft.
  3. After baking, sprinkle lightly with flaky sea salt.
  4. Allow the brookies to cool completely in the pan for about 2 hours before slicing into 16 squares.

Notes

Serve warm with a scoop of vanilla ice cream or enjoy at room temperature. Store in an airtight container at room temperature for up to 3 days, or refrigerate for about a week. For longer storage, freeze for up to 3 months. Thaw at room temperature before enjoying.
