  • 1 pound Chicken breasts You can substitute with rotisserie chicken for less prep.
  • 2 cups Bell peppers, sliced Use any color; mix and match for variety.
  • 1 large Onion, sliced Sweet onions enhance the flavor; red onions can be used as a substitute.
  • 1 packet Taco seasoning Use homemade or store-bought.
  • 8 ounces Cream cheese Sour cream or Greek yogurt can be used for a tangy twist.
  • 2 cups Shredded cheese Cheddar or a Mexican blend melts beautifully.
  • 1 cup Tortilla chips, crushed For a crunchy topping, optional.
  • 1 tablespoon Fresh cilantro, chopped Optional, for garnish.

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, add a touch of oil and cook the chicken until it’s no longer pink. Remove and set aside.
  3. In the same skillet, add sliced bell peppers and onion. Cook until they’re soft and slightly charred, about 5-7 minutes.
  4. Stir in the taco seasoning and return the chicken to the skillet. Mix everything well.
  5. Add in the cream cheese and stir until it’s melted and evenly coated over the chicken and veggies.
  6. Pour the mixture into a baking dish, then sprinkle the shredded cheese on top. Add crushed tortilla chips if using.
  7. Place the dish in the oven and bake for about 15-20 minutes, until everything is bubbly and golden.
  8. Top with fresh cilantro before serving, if desired.

Notes

You can prep your veggies and cook the chicken a day before to save time. For extra flavor, mix in different cheeses or add sliced jalapeños for heat. This casserole is delicious on its own, but pairs well with rice, green salad, or warm corn tortillas.
