Ingredients

Main Ingredients
  • 8 large Eggs The heart of this casserole, providing structure and richness.
  • 2 cups Milk Adds creaminess; dairy-free options include almond or oat milk.
  • 6 cups Bread Use day-old bread; any kind works—white, whole grain, or croissants.
  • 2 cups Cheese A mix of sharper cheddar and mozzarella. Pepper jack for spice.
  • 1 pound Sausage Ground breakfast sausage; can swap for turkey sausage or leave out.
  • 1 cup Bell Peppers Choose any color; add spinach for extra greens.
  • 1 medium Onion Brings depth of flavor; use shallots or green onions for a milder taste.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 teaspoon Garlic Powder Elevates the dish.

Method

Preparation
  1. Tear the bread into bite-sized pieces and place them in a large mixing bowl.
  2. In a skillet over medium heat, crumble and cook the sausage until browned. Set aside.
  3. In the same skillet, sauté chopped onions and bell peppers until soft, about 5 minutes.
  4. In a separate bowl, whisk together the eggs, milk, salt, pepper, and garlic powder until well combined.
  5. Fold the cooked sausage, sautéed veggies, and cheese into the bowl with the bread. Pour the egg mixture over everything and gently stir until evenly coated.
  6. Grease a baking dish and pour the mixture in, spreading it evenly. Sprinkle a little extra cheese on top if desired.
  7. Preheat your oven to 350°F (180°C) and bake for about 40-45 minutes, or until set and golden brown on top.
  8. Allow it to cool for a few minutes before serving. Slice into squares.

Notes

Use stale bread for better texture. Let the dish rest for 10 minutes after baking for easier slicing. Consider adding red pepper flakes for extra spice.
