  • 1 large egg Room temperature for easier mixing.
  • 1 teaspoon vanilla extract For additional flavor.
  • 2 1/4 cups all-purpose flour Do not overmix when adding.
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. In another bowl, combine the flour, baking soda, and salt; gradually add this to the creamed mixture.
Baking
  1. Drop rounded tablespoons of dough onto ungreased baking sheets.
  2. Bake for 8 to 10 minutes, or until the edges are golden.
  3. Let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store in an airtight container at room temperature for about a week. Can be frozen for up to three months.
