Ingredients

For the Bruschetta Topping
  • 2 cups Roma tomatoes diced small (about 4-5 medium tomatoes)
  • 1/4 cup fresh basil finely chopped
  • 2 cloves garlic minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic glaze (or balsamic vinegar)
  • 1/4 tsp salt
  • pinch black pepper
For the Fish Sticks
  • 12-16 pieces frozen fish sticks (about 10-12 oz package)
  • Cooking spray optional, for air fryer or oven
For Serving (Optional)
  • 2 tbsp Parmesan cheese grated
  • Fresh basil leaves for garnish

Equipment

  • Air Fryer
  • Large Mixing Bowl
  • Sharp Knife
  • Cutting Board

Method

Prepare the Bruschetta Topping
  1. Dice the Roma tomatoes into small, uniform pieces. Finely chop the fresh basil and mince the garlic cloves.
  2. In a medium mixing bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, balsamic glaze, salt, and black pepper. Stir gently to combine all ingredients.
  3. Set the bruschetta topping aside at room temperature for at least 10-15 minutes to allow the flavors to meld. Stir occasionally.
Cook the Fish Sticks
  1. Preheat your air fryer to 400°F (200°C) or your oven to 425°F (220°C). If using an air fryer, you may lightly spray the basket with cooking spray. If using an oven, place fish sticks on a baking sheet.
  2. Arrange the frozen fish sticks in a single layer, ensuring they are not overlapping. Cook according to package directions, typically 8-12 minutes in the air fryer or 12-15 minutes in the oven, flipping halfway through, until golden brown and crispy.
Assemble and Serve
  1. Once the fish sticks are hot and perfectly crispy, carefully transfer them to a serving platter or individual plates.
  2. Spoon a generous amount of the fresh bruschetta topping over each hot fish stick. For best results, spoon just before serving to maintain crispiness.
  3. Optionally, sprinkle with grated Parmesan cheese and garnish with additional fresh basil leaves. Serve immediately and enjoy your Best Bruschetta Fish Sticks!

Notes

For an extra layer of flavor, you can lightly toast slices of baguette or crostini and serve the bruschetta fish sticks alongside them, or even place the fish sticks on top of the toasted bread with the bruschetta.
