Ingredients

For the Ribs
  • 2 racks Pork spare ribs Look for racks that look fresh and meaty.
For the BBQ Rub
  • 1/2 cup Brown sugar Can substitute with honey or maple syrup if needed.
  • 1 tbsp Garlic powder Fresh minced garlic can be used for a stronger taste.
  • 1 tbsp Onion powder Provides depth to the flavor.
  • 1 tbsp Smoked paprika Regular paprika can be used as a substitute.
  • 1 tsp Black pepper Adjust based on your preference.
  • 1 tsp Salt Balances all the flavors.
For Glazing
  • 1 cup BBQ sauce Use your favorite store-bought or homemade sauce.

Method

Preparation
  1. Start by removing the silver skin from the back of the ribs to prevent chewiness.
  2. In a small bowl, mix together brown sugar, garlic powder, onion powder, smoked paprika, black pepper, and salt until well combined.
  3. Rub the spice mixture evenly over both sides of the ribs, massaging it in.
  4. Wrap the ribs in plastic wrap and let them marinate in the fridge for at least an hour, preferably overnight.
Cooking
  1. Preheat your oven to 300°F (150°C).
  2. Place the ribs, bone-side down, on a baking sheet lined with aluminum foil. Cover tightly with another piece of foil.
  3. Bake for about 2.5 to 3 hours until tender.
  4. Remove from the oven, discard the top foil, and brush BBQ sauce generously over the top.
  5. Return to the oven uncovered and bake for another 30 minutes to get a sticky glaze.
  6. Let the ribs rest for 10-15 minutes before slicing.

Notes

You can serve the ribs with sides like coleslaw, baked beans, or cornbread. For added flavor, try mixing BBQ sauce with apple cider vinegar or hot sauce.
